To evolve an Eevee into Espeon, increase its Friendship, and level it up during the day. You can improve its Friendship by leveling it up, playing with it, and feeding it at the Camp or by giving it the Soothe Bell, which is acquired in Hammerlocke in the house to the right of the Pokemon Center.
How to evolve Eevee into Umbreon in Pokemon Sword & Shield
To evolve an Eevee into Umbreon, increase its Friendship, and level it up at night. The process for improving its Friendship is identical to that of Espeon, listed above: level it up, spend time with it at the Camp, and give it the Soothe Bell.

How to evolve Eevee into Sylveon in Pokemon Sword & Shield
To evolve Eevee into Sylveon, you must increase its Friendship and level it up while it knows a Fairy-type move. The process for earning Friendship is the same as Espeon and Umbreon, both outlined above.
Learning the Fairy-type move is also incredibly simple. All you need to do is visit the Pokemon Center and talk to the person who lets you re-learn moves. All Eevee can learn Baby-Doll Eyes, so if you don’t have it already, you can easily put it back on your Pokemon.
